I opened my eyes after a weekend packed with shows, only to discover I slept through breakfast. Sore and starving, my hangry alter ego awoke.
I create this problem for myself all the time on tour. What can I say? A girl needs her beauty sleep.

Luckily, a short walk away, Wilson St. Pantry waited on a quaint side street. Their fresh, nutritious brunch options packed that post show week calorie punch that coffee and a croissant always lacks. Plus, I got to try local Glasgow bites!
Scottish sunlight poured through the windows, warming my skin while I waited for a table. The natural light boosted my serotonin as a steady stream of locals waltzed in and out the front door.
Definitely reserve a table ahead of time, just to be on the safe side. Plenty of inside and outside seating allowed for my wait to be no more than 10 to 15 minutes.
The black and white checkered floor, along with neutral wall coloring, opened up the space. It was warm and inviting just like the staff. I watched a pup slurp up it’s “puppycino,” which was the cherry on top of the restaurant’s charm.
I ordered poached eggs, toast, and a hazelnut latte. Wilson St. Pantry served me eggs from the Corrie Mains Farm, located in the UK. Their hens are “kept in small colonies in traditional wooden houses … and are allowed to range free during daylight hours.”

I could see the quality of the perfectly poached eggs before I took one bite. Rich and yellow, I was dipping my sourdough with my eyes and stomach, giddy at the good fuel in front of me.
Wilson St. Pantry had an entire gluten-free and vegan menu available upon request. I truly felt like they were intertwined in the locality of Glasgow, with their customers, community, and ingredients.

I must admit, I’m constantly learning about sustainable food choices and what works to fuel my body for my specific needs. It’s proven incredibly tough to balance both, love my food, and not obsess.
After sipping the last sips of my rich hazelnut latte, the intention behind the sustenance at Wilson St. Pantry both left me energized and warmed my heart.
